•An e-nose system was utilized to monitor VOCs of mint leaves during drying process.•PCA was significantly tracked variation of the VOCs during the process.•MLR model successfully predicted MCwb of the sample during drying using aroma features.•Monitoring drying conditions using e-nose will improve reliability of the process.
