Are beliefs stronger than taste? A field experiment on organic and local apples

•Consumers rated the taste of labeled and unlabeled organic and local apple slices.•Ratings differed significantly across field experiments at three locations.•Factor analysis identified four groups based on opinions and taste beliefs.•Organic and local supporters had higher ratings for the respective labeled versions.•Taste beliefs can play a stronger role in taste perceptions than actual taste.
