Quinoa seed coats as an expanding and sustainable source of bioactive compounds: An investigation of genotypic diversity in saponin profiles

•Saponins (SAPs) have multiple applications in pharma and agriculture.•Quinoa seed coats, by-products of the dehulling process, are rich in SAPs.•Bitter quinoa varieties contained more SAPs than sweet varieties.•The main aglycones were oleanolic acid, hederagenin and phytolaccagenic acid.•Relative amounts of aglycones and SAP profiles displayed genotypic variability.
