Metabolomic analysis of Salvia hispanica seeds using NMR spectroscopy and multivariate data analysis

•NMR Metabolomic studies were performed on chia seeds.•Commercial black and white chias and early flowering chias were analyzed.•This is the first application of such approach to chia.•Apolar extracts were based on highly unsaturated long chain lipids.•Polar extracts mainly contained carbohydrates, caffeoyl derivatives and flavonoids.
