•The extraction of inositol phosphates (InsPs) was optimized for the complexity of the almond matrix.•Inositol hexakisphosphate made up less than 80% of the InsPs molar concentration in most samples.•InsPs do not make up the total organic phosphate content of almond meal and brown skins.•InsPs profile varies significantly among almond cultivars.
