摘要
•A β-CGTase was immobilized on silica by covalent attachment.•The reaction conditions could be modulated to produce mainly γ-CD.•α and β-CD production are favored at pH higher than 8 and short reaction times.•Long reaction time and pH below 5 favor γ-CD formation.
