•We measure stomatal conductance of thirty Conference pear trees for forty-seven days.•We measure canopy temperature using thermal infrared imaging for thirty-two days.•High ambient temperature and vapor pressure deficit cause stomatal oscillation.•Variability in canopy temperature will increase in water stressed trees.•Stomatal conductance changes at a faster rate than canopy temperature.
