•Pectin–chitosan multilayer film on colloidal particles is examined by electro-optics.•Information on film stiffness is obtained from electro-optical effects at high fields.•Film stiffness depends on polyelectrolyte charge density and divalent salt concentration.•Anomalous electro-optical behavior is related to operation of elasto-hydrodynamic effect.
