•52.6Gm3/year of freshwater required to produce the food consumed by the UK.•7% of this is “blue” water withdrawn from surface and ground water resources.•Healthier scenarios had a small impact on total blue water scarcity footprint.•Policies to promote healthier eating may increase localised blue water scarcity.
