•We analyze the gelation of methylcellulose in aqueous solutions and ceramic pastes.•Rheological data were obtained in oscillation vs. steady shear flow.•Low shear rates shift the gelation temperature downwards.•High shear rates shift the gelation temperature upwards.•We confirm our findings in ceramic paste.
