My research focuses on enzyme technology. Current research activities include:
Use of enzymes to tailor lipids with respect to physico-chemical properties and/or nutritional value.
Production of prebiotic food ingredients by enzymatic modification of carbohydrates.
Enzymatic synthesis of carbohydrate-based surfactants.
Processing of oats.
Enzymatic reactions in organic media.
