We have published a refrigerated food preservation review and new methods to assess the preservation performance of cold chain components with controlled but realistic experiments. Recently, we developed objective indicators showing the need for major cold chain design improvements. My favorite is a Relative Preservation Indicator (RPI) with values 1 indicating superior, acceptable and poor cold chain performance. If >>1, the situation requires IMMEDIATE attention.
