He holds the Canada Research Chair in Lactic Cultures Biotechnology for Dairy and Probiotic Industries (2003-2017). Denis Roy is Chairman of the Scientific Committee and founding member of Probio Symposium since 2000. He is a founding member and part of the executive committee for the Association for Health Ingredients in Foods (www.aisa-ahif.org). He is the author or co-author of over 110 scientific publications and book chapters. His work aims to deepen the advanced knowledge on bacterial cultures and prebiotics that may enter into production of functional foods, to understand their activities, and to study their properties and alleged effects on health as well as interactions with gut microbiota.
